How we approach the implementation of a major warehouse installation: the Sonoma by SAS method
At Sonoma by SAS, we know that installing a battery of concrete tanks in a winery is not just a technical project: it is a strategic decision that directly influences the quality of the wine, operational efficiency and the identity of the winery. For this reason, every time a client proposes a large-scale implementation, we activate a study process designed to ensure that each tank chosen responds exactly to the oenological and architectural needs of the space.
Understand the customer’s crafting philosophy
The first step of any project is to know the vision of the winery. What style of wines do you make? What varieties do you work with? What weight does terroir have in your philosophy? Are you looking for more texture, stability, freshness, structure or aromatic precision?
This first phase is essential to define whether the winery needs small-volume concrete tanks – such as the Mini EGG, NuBarrel, Amphora or EGG – or if the operational needs require large-format tanks, such as the Conical, Super EGG, Square or Tower.
Understanding the customer allows us to recommend solutions that will enhance their identity and facilitate their daily work.

Space analysis and implementation proposal

The next step is to study the winery from an operational point of view. We carry out measurements, analyse accesses, useful heights, circulation of personnel and machinery, as well as the workflow during the harvest.
Based on this information, we develop a customized implementation plan, where we optimize:
- The circulation of must and wine
- The ergonomics of everyday work
- The total installed capacity
- Future modularity (extensions, new tanks, etc.)
- Energy and thermal efficiency
The unique geometry of Sonoma by SAS concrete tanks – with smooth surfaces, mass-integrated colours and thermal stability – enables highly efficient configurations even in tight spaces.
Selection of the ideal model and volume

Each winery requires a different type of tank, and our job is to identify which one offers the highest oenological yield:
- Mini EGG: ideal for microvinifications, single-vineyard wines and lees in natural suspension.
- EGG: oval stability for fine whites and reds.
- NuBarrel: the alternative to barrels without wood input.
- Amphora: pure varietal expression and internal energy of the wine.
- Large volume conical tanks: stable fermentations, superior thermal control and homogeneity in large batches.
- Truncated conical tanks: balanced extraction for structured reds.
This stage includes volumetric simulations and calculations of optimal capacity for present and future harvests.
Engineering, manufacturing, and customization
Once the models have been defined, our technical team develops the tanks to measure: choice of stainless-steel accessories, type of valves, sight glasses, outlets, position of mouths and any element necessary to integrate the tank perfectly into the cellar.
We manufacture in high-density concrete with mass-pigmented colour and a 10-year anti-crack warranty, ensuring that each tank maintains aesthetic uniformity and robustness for decades.

Installation, levelling and commissioning
A commitment: tanks that accompany the evolution of the winery
Implementing tanks in a winery is a project that marks the future of its wines. At Sonoma by SAS, we approach it as a strategic collaboration, where we combine engineering, oenology and personalized accompaniment so that each deposit becomes a precision tool at the service of the terroir.
Because we don’t install tanks: we build solutions that help create wines with soul.
